The holidays are a time for joy, celebration, and of course - delicious desserts! We are sliding into day 3 of my "Five days of desserts" series with these Frosted Oreo Blondie Cups. If you're looking for a festive treat that combines indulgence, fun, and just the right amount of holiday cheer, these blondies are the perfect choice! Not only are they gorgeous to look at, but they also pack a delightful surprise with every bite.

Tips for the perfect blondie cups:

  1. Use room temperature ingredients: This helps the batter come together smoothly and ensures even baking.

  2. Cover the Oreo completely: When layering the batter, make sure to fully cover the Oreo to keep it from peeking through.

  3. Let them cool completely: For the frosting to adhere properly and stay pretty, the blondie cups need to be completely cool.

Food coloring note:

For the most vibrant and professional-looking frosting, I recommend using a gel food coloring instead of liquid. Gel coloring is more concentrated, so you'll achieve bold colors without thinning the frosting. This makes it much easier to pipe and ensures your designs stay in place!


Frosted Oreo Blondie Cups Recipe

Yield: 12 blonde cups

Serving size: 1 cup


Ingredients:

For the blondie cups:
  • 1/2 cup unsalted butter, melted

  • 1 cup brown sugar, packed

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 12 oreos (The new festive frosting cookies)

For the frosting:
  • 1/2 cup shortening

  • 1/2 cup unsalted butter, melted

  • 2 cups powdered sugar

  • 2 tbsp heavy cream (or milk)

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • Red or green food coloring (gel works best)

  • Holiday sprinkles


Instructions:

  1. Preheat oven to 350 degrees F. Grease a 12 cup muffin tin or line it with cupcake liners.

  2. In a large bowl, whisk together melted butter and brown sugar until smooth. Mix in the egg and vanilla extract until fully combined. Gradually fold in the flour, baking powder, and salt until just combined.

  3. Scoop about 1 tbsp of blondie batter into the bottom of each muffin cup. Place an Oreo on top of the batter, then top with another tbsp of blondie batter, spreading it to completely cover the cookie.

  4. Bake for 15-18 minutes, or until the edges are golden brown and a toothpick inserted into the blonde (not the oreo) comes out clean.

  5. Let the cups cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  6. To make the frosting: In a large bowl, beat the shortening and softened butter together with a hand or stand mixer until smooth and creamy. Gradually add the powdered sugar, 1/2 cup at a time, mixing well after each addition. Add the heavy cream, vanilla extract, and a pinch of salt, beating on high speed until the frosting is fluffy and holds its shape. Add in a few drops of coloring gel (if using) and gently fold in with a rubber spatula. If you'd like to use more than one color, separate the frosting into smaller bowls and drop some of the gel coloring into each bowl. Fold in with a rubber spatula.

  7. Transfer the frosting to a piping bag fitted with your favorite tip (I like the star or round tip) Pipe a generous swirl of frosting on top of each blondie cup. Decorate with holiday sprinkles for an added touch of holiday cheer!


Storing suggestions and guidance:

To keep your blondie cups fresh and delicious, follow these simple storage guidelines:
  • At room temperature: If you plan to enjoy them within 1-2 days, store the blondies in an airtight container at room temperature. Keep them in a cool, dry spot away from direct sunlight to prevent the frosting from becoming too soft.

  • Refrigerated: For longer storage (up to 5-7 days) place the blondies in an airtight container and store them in the fridge. Let them come to room temp before serving for the best flavor.

  • Freezing: I highly recommend enjoying these fresh, but if you need to freeze them, place the fully assembled cups on a baking sheet and freeze until frosting is firm. Once firm, wrap the blondie cups in plastic wrap and store them in a freezer-safe container or bag for up to 3 months. When ready to enjoy, thaw in the fridge overnight and bring to room temperature before serving. Additionally, you can freeze the blondies without frosting and frost them the day you eat them.
