Note: For the shells, I buy the package with 15 tartlet shells included, so this is what the recipe will reflect.

Spinach + Artichoke Tartlets

Yield: 15 tartlets


Ingredients:
  • 1 package frozen spinach, thawed and drained

  • 1 can artichoke hearts, chopped

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated parmesan cheese

  • 1/2 cup mayonnaise

  • 1/4 tsp garlic powder

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1 package mini phyllo pastry shells


Directions:
  1. Preheat oven to 350F.

  2. In a mixing bowl, combine the spinach, mozzarella, artichoke hearts, parmesan, mayonnaise, garlic powder, salt, and pepper. Mix well.

  3. Place the pastry shells on a baking sheet. Spoon the spinach mixture into each shell.

  4. Bake for about 10-12 minutes, or until the tartlets are heated through and the edges of the pastry are golden brown. Remove from oven and let cool slightly before serving.
