Chewy Oatmeal Chocolate Chip Cookies Recipe

Yield: This recipe makes about 24 cookies

Serving Size: 1 cookie

Ingredients:

  • 1 cup unsalted butter, softened

  • 1 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 2 cups old-fashioned oats

  • 1 cup chocolate chips

  • 1/2 cup chocolate chunks (I love using Hu bars for this; just chop them up)

Directions:

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.

  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.

  3. Beat in the eggs one at a time, then stir in the vanilla.

  4. In a separate bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture into the wet mixture.

  5. Stir in the oats, chocolate chips, and chocolate chunks until well combined.

  6. Drop rounded tablespoons of dough onto the prepared baking sheet.

  7. Bake for 10-12 minutes, or until the edges are golden brown.

  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
