Lightened Cajun Chicken Pasta

Yield: 4 servings

Serving Size: 1 ½ cups


Ingredients:

  • 8 oz whole wheat pasta

  • 1 lb boneless, skinless chicken breast, cut into strips

  • 1 tbsp olive oil

  • 1 tbsp Cajun seasoning

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 small onion, sliced

  • 2 cloves garlic, minced

  • 1 cup low-sodium chicken broth

  • 1 cup unsweetened almond milk

  • 1 tbsp whole wheat flour

  • Salt and pepper to taste

  • Fresh parsley for garnish



Directions:

1. Cook the pasta according to package instructions. Drain and set aside.

2. In a large skillet, heat olive oil over medium-high heat. Add chicken strips and sprinkle with Cajun seasoning. Cook until chicken is no longer pink, about 5-7 minutes. Remove chicken from the skillet and set aside.

3. In the same skillet, add the bell peppers, onion, and garlic. Cook until vegetables are tender, about 5 minutes.

4. In a small bowl, whisk together chicken broth, almond milk, and flour until smooth. Pour the mixture into the skillet with the vegetables.

5. Bring the mixture to a simmer, stirring constantly until it thickens, about 3-5 minutes.

6. Add the cooked chicken and pasta to the skillet, tossing to combine. Season with salt and pepper to taste.

7. Serve garnished with fresh parsley.
