Lightened Cajun Chicken Pasta
Yield: 4 servings
Serving Size: 1 ½ cups
Ingredients:
8 oz whole wheat pasta
1 lb boneless, skinless chicken breast, cut into strips
1 tbsp olive oil
1 tbsp Cajun seasoning
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
2 cloves garlic, minced
1 cup low-sodium chicken broth
1 cup unsweetened almond milk
1 tbsp whole wheat flour
Salt and pepper to taste
Fresh parsley for garnish
Directions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium-high heat. Add chicken strips and sprinkle with Cajun seasoning. Cook until chicken is no longer pink, about 5-7 minutes. Remove chicken from the skillet and set aside.
